Day 3- ¡Yo quiero tasty nachos!

Well. Tonight Marty and I went out for dinner. To a restaurant that he doesn't work at. You have no idea how strange it is to sit in a restaurant and not have another manager or 3 come and sit at your table and conduct business. Normally, I don't mind this at all, but sometimes it is nice to actually get to converse with the person you are out to dinner with.

The only downside is that when the bill comes, there are actual numbers on it. Ah well.

So dinner tonight could have very easily been made at home. I had some amazing nachos with shrimp, chicken and steak on them and Marty had lime chicken.

This is how I would do it:

Lime Chicken
2 T olive oil
2 limes, juiced and zested
dash of cumin
dash of oregano
1 clove garlic, finely diced
Salt & Pepper to taste (pinch of salt and a few grinds of pepper)

Mix marinade and test to see if it is "limey" enough. If not, add the juice and zest of another lime. Check for seasoning. If it tastes good, pour over 4 boneless skinless chicken breasts and mix to coat well. Let sit refrigerated for 1/2 hour or so, and grill until the internal temperature reaches 165.

Marty's chicken was smothered in mushrooms that look like they were cooked in butter. Yum, but not something I could eat very often and live to tell about it. I would slice the mushrooms and sautee in 1 t. or so of olive oil. Just enough to get the mushrooms to cook down a bit.

Serve with Lucy's rice made with brown rice, a cut lime for squeezing, shredded lettuce, sliced tomato and avocado.

Nachos
Honestly, I wouldn't make these at home because I was only able to eat 1/8th of them before I was pretty sure I was going to die. But, if I were going to make them I would pick 1 protein and sautee it in a little olive oil while sprinkling with cumin and oregano until it looked right. Serve on a bed of tortilla chips and drench with cheese sauce. Since I can be pretty lazy, I would just sprinkle queso blanco over it and bake to melt. (Although, queso blanco won't really "melt" in the way you are expecting. When it melts it just sort of gets soft and greasy.) Top with shredded lettuce and pico de gallo.
